we kept it simple:
amazing mashed potatoes, and a t-bone steak! i once heard someone say that gluten free food always seems dry... not the case here my friends!
so these potatoes - i just chopped them up really small, peels on, and popped them on the stove to steam them. meanwhile, i chopped up half a red onion and caramalized that in butter. marc was in charge of the barbeque, so he grilled up the steaks with just salt and pepper on them (texas style, so we once learned from our great texan friends). when the taters were cooked i whipped them up with my hand blender, added chives, fresh pressed garlic, crumbled feta, the caramalized onions and sour cream.
so quick, this was all done in half an hour, and so easy. not the most nutrient-dense supper, but so flavorful and it hit the spot! if you're new to eating gluten free, meals like this that are simple and inherently gluten free are good options, they will help you to feel normal, and free from deprivation!
