2 crowns of broccoli, coarsely chopped (including the stalks, 'cause why not?)
1/2 large red onion, coarsely chopped
2 heaping teaspoons mustard powder
2 tablespoons nutritional yeast
1/2 to 1 cup walnuts
salt & pepper to taste
put all ingredients except for the walnuts in a pot, and cover with water. (just enough to cover the top of your broccoli, as though you're making a stock)
bring to a boil and continue cooking until broccoli is tender
remove from burner
add walnuts to soup, and using a hand blender (or pour it into your upright blender or food processor if necessary) blend ingredients until they are relatively smooth.
add some more salt, as it will need a little bit more than you think. the way i see it, if the majority of your diet is created from good, nutritious, whole foods, you probably aren't with the masses in the category of sodium overload. in this case, feel free to add the salt until it tastes delicious!
you should end up with a lovely, not-too-thick, uniquely textured, slightly cheesy flavored broccoli soup that is gluten and dairy free, and going to make you big and strong! (that's what dane would tell you ;)
