i've been journeying with a really sweet family as their 6 year old little girl has had to remove gluten, dairy and soy from her life. she has the greatest attitude about it, she's excited about the new foods she gets to eat and truly believes she's a part of a new, cool club. but she misses cheese, and particularly mac & cheese. i have tested out many-a-recipe for a gf df version, and have yet to hit a home run. i went back to the drawing board for this great little girl and perused recipe after recipe, in search of something different than the plethora of recipes i've tried so far in my own house, sans success. i'm happy to announce that her great mom made this recipe today, and we have a winner!!! this sweet girl is happy, and that just makes my day.
check out this recipe with only one substitution: instead of coffee creamer, try the coconut creamer for a bit more of a recognizable-food version ;)
