well, i really did think i found a gem last february when we spent some time in arizona.  i stumbled across this brand of gluten free bread that i had never tried, and thinking that it couldn't be any worse than some of the other brands i had tried, i went for it.  i was also impressed because they had a multigrain version that seemed to have a wee bit more nutritional value than the usual.  because we were staying with friends, i didn't toast it in avoidance of their gluten-filled toaster, and instead would just nuke it in the microwave each time i made a sandwich.  and sandwiches i made... many, many sandwiches, because i was enjoying this bread so much!

now i'm sure you know as well as i do, that after being completely gluten free for a number of years, our expectations of bread have seriously diminished.   i even give the disclaimer when i share (on the rare occasion that someone wants to eat it) gf bread with any friends that i don't have the greatest judgement anymore of what is good and what isn't, based on the fact that i haven't eaten gluten bread since i was young and free from wrinkles ;) it's been a while.   so when this friend ended up being over for lunch, and my crazy pregnancy hormones dictated that i should really, really eat veggie sandwich for lunch, i felt it was only polite of me to offer to make her one as well.  when she said for the first time "this bread is really good", i was floored.  did she mean that it might be good compared to regular standards even?  no, couldn't be... and then she said it again "this is so good, what kind of bread is it?"..... oh. my. goodness.  this bread really is good!!! untoasted, just nuked in the microwave from frozen for 15 or 20 seconds. 

so, the burning question is, "what kind of bread is it?"...

it's made by Canyon Bakehouse, out of Colorado I believe.  my favorite is the 7-grain bread.  It's really easy to find in the u.s., they have a 'find a store' option right on their site - but a little trickier in canada.   our little Sardis health food store here in town carries their foccaccia bread, but not yet the loaves.  I sneak across the border to the food co-op on bellingham to buy this bread for $4.99!?  almost too good to be true.  the food co-op is the first place i've found it since being in arizona, and stuffing my carry-on full of loaves when we came back.  my suggestion to you is to call around to your local stores, and if they don't already carry it, request it!  that goes along way, from what i've been told, stores appreciate knowing from us gluten free folks which products we'd like to buy from them.  you should be able to track it down, or at very least you can place an order for it online and they will ship it the next day. 

here's to our worlds getting one step better... who knew soft bread would change our lives so?

I am also a Bellingham Co-op Canyon Bakehouse shopper. Price is great. I am also quite pleased to have had it appear on the shelves of my local supermarket here in Vancouver. Donald's Market is now carrying Canyon Bakehouse breads. Not as cheap as across the line, but convenience is sometimes a winner.
