for the cakes:
1 pamela's vanilla cake mix
+make as directed, we substitute coconut oil for the oil that is called for, and take pamela up on her suggestion of almond flavoring. (if you're going to send them to school, make sure the almond flavor is artificial otherwise you're sending a forbidden food, and make sure the flavor you use is gf!!)
+bake in a well-greased heart shaped cupcake pan (or a round one if you don't have a heart one), only filling each section 1/3 to 1/2 full
+once baked, remove cupcakes from pan and cool completely
+once cooled, slice the top off of the cupcake
for the filling:
1 large container regular, kraft brand cool whip
1 box jello brand instant vanilla pudding
3 tablespoons milk or milk alternative (coconut, almond, soy, rice, etc + make sure it is gf, these ones can be sneaky!)
2 tablespoons kahlua
+whip all the ingredients together until well blended
+spread filling inside each cupcake and then return the "lid"
+you will have filling left over, try it out as a fruit dip or freeze it in individual ziploc bags to pull out when you need to ice a gf cupcake to send with your kids to another party
you now have yourselves what we call "whoopie pies" - but for the love of the whoopie pie, please say the name with a little pizzazz. pretend you're from the deep south, and really give 'er each time you refer to your beloved "whoopie pie", it makes it so much more fun. but whether you say the name like you mean it or not, your baked treats will be a hit wherever you take them!
