i used this recipe, which i originally saw on pinterest! i made the cake part exactly how they recommended, i used a celemix vanilla cake mix but would have used any brand, this is just what they had at the superstore when i went today. i mixed it with president's choice brand pumpkin puree - word to the wise, make sure you get a pumpkin puree that is just 100% pumpkin to avoid risky spices and flavors.
i made it into cupcakes instead of a cake in a pan, just to make serving it a bit cuter :)
once you've baked your cake(s), you're to poke holes in the top and then pour sweetened, condensed milk overtop. instead of pouring condensed milk into the holes, i used a can of full fat coconut milk mixed with maple syrup to sweeten it. it worked wonderfully! and then we had a completely gluten free, dairy free dessert.
to top it off, i put a small tub of cool whip in the fridge instead of the freezer, so it would have the same consistancy as whipped cream and therefore be an easy, indetectable switch for dane's dessert. (while the rest of us indulged in real whipped cream, made with icing sugar and real vanilla extract, of course).
i plated it with the cupcake first, whipped cream on top, a drizzle of smuckers caramel sauce and a sprinkle of chipits skor bits. it looked decadent, but tasted even more amazing!! highly recommend, and for someone who doesn't bake well, this was easy peasy! please do try it at home!
